    This refreshing amber lager pours a brilliant copper hue with an off-white head. Clean, light aromas of herbal hops, honeyed toast and honey. Lightly sweet on the palate, aromas carry through to the taste with a hint of caramel and toasted corn. Finishes crisp and clean with just a hint of hop bitterness. Overall, an easy-drinking amber lager with light to medium body.

    Golden yellow with a cream-colored head, this is a beer-flavored beer in the best way. The aroma hints at fruit salad and graham crackers. Light on the palate with a crisp finish, it brings plenty of malt character without sweetness. A touch of hop bitterness adds balance, ending with soft stone fruit notes. Clean, smooth, and easy to drink.

  • Ashish Saxena
    CEO
    With over 24 years of experience driving success across diverse industries, Ashish brings a wealth of expertise in scaling businesses and fostering innovation. Most recently, Ashish served as President at UrbanPiper, where he spearheaded global revenue growth and operations. Prior to that, as the CEO of Chili's Grill & Bar, he successfully expanded the brand to 15 new locations across South and West India.

    Ashish’s career also includes leadership roles at Ninjacart, CloudKitchens, Bunge, Accenture, and HCL, where he played a pivotal role in shaping strategic direction and operational excellence.

    Ashish holds an MBA from IIM Lucknow and a BE from Delhi College of Engineering. Outside of work, he enjoys honing his culinary skills for his 11-year-old daughter and keeping up with the latest films.
  • Brinder Narula
    Global Culinary Director
    Michelin Star Chef Brinder Narula is the new Global Culinary Director at Total Environment Hospitality. A New Delhi native, Chef Brinder’s passion for cooking was inspired by his grandmother, with further training at IIHM and The Oberoi School of Hotel Management. He has held key roles at The Oberoi Group, Vama in London, and Michelin Star restaurants like Trishna, Gymkhana, and Benares in London. He’s also appeared on UKTV's Food Channel and worked as a yacht chef during the 2018 Monaco Grand Prix. Chef Brinder’s culinary focus is on fresh, seasonal ingredients, and he enjoys traveling, music, and fixing things in his spare time. We’re excited to have him bring his expertise and passion for food to our kitchens!

    General Manager
    Born and raised in Strasbourg, France, Thomas brings a rich global perspective and a deep-rooted passion for hospitality to his role as General Manager at Windmills Craftworks. A graduate in Culinary Arts and Management from the Lycée Hôtelier Alexandre Dumas, he has honed his skills at celebrated dining destinations in Paris, Washington, D.C., and Las Vegas.

    His journey includes roles at renowned establishments such as Fiola, Joël Robuchon, Bresca, and Ortikia—experiences that have shaped his commitment to elevating guest experiences and leading high-performance teams.

    With a sharp eye for detail and a warm, guest-first approach, Thomas now leads operations at Windmills Craftworks, creating memorable moments for every guest.
  • Kira Goidel
    Artist Experience Manager
    Kira Goidel is an arts programming professional and vocalist originally from New York, now based in Texas. With a Bachelor of Music from Purchase College Conservatory and a Master of Music from the University of North Texas, she brings deep experience both onstage and behind the scenes. Kira has led and arranged for her own ensembles, programmed performances for venues like Birdland Jazz Club, Sundance Square, and AT&T Performing Arts Center, and developed educational content for JazzVoice.com. She’s also worked with Green Door Artists to support jazz musicians. Kira is thrilled to join the team at Windmills in The Colony, TX, and looks forward to contributing to the continued growth of the arts in the community.

    Corporate Sales Manager
    Kara Beasley joins us as Corporate Sales Manager, overseeing corporate sales and local marketing at Windmills Dallas. A 22-year hospitality veteran, Kara has held leadership roles with Courey Hospitality, RCI Holdings, and Rock Libations. She holds a business degree from Colorado State University and brings extensive experience in general management and event sales. Kara has planned events for companies like Avondale, Charles Schwab, JP Morgan Chase, and Fidelity. She's also an active member of the Dallas service industry, supports the Nathan Gage Ingram Foundation, and fundraises for Keller ISD.
  • Marcus Baskerville
    Brewmaster
    Marcus Baskerville is an award-winning brewer and industry leader best known as the co-founder of Weathered Souls Brewing Co. His barrel-aged stouts have earned national acclaim, with recognition from Wine Enthusiast’s 40 Under 40, Imbibe’s 75, and a James Beard Award nomination.

    He is the founder of the global Black is Beautiful initiative and has served on the Brewers Association Board, the Texas Craft Brewers Guild, and as President of the National Black Brewers Association.

    As Brewmaster at Windmills, Marcus oversees recipe development, quality control, and team mentorship, bringing a passion for storytelling, consistency, and community-driven brewing.
